HEY FRIENDS!!!! How is everyone? Can you believe it is just 1 week until Christmas??? I hope y’all are far ahead of me on the shopping thang’, because I have barely started – whoops!!! Is anyone headed anywhere sunny, warm and beachy? If so, may I please come along?

Nope, rather I have been doing many things to hopefully keep my MS at bay and encouraging it to hightail itself to a foreign country. I even offered it ALL of my frequent flyer miles, but thus far it has not taken me up on said offer. What a selfish jerk, right?

Yup, the old MRI machine/tunnel of doom. I don’t like it and it does not like me. You would think that since we have known each other for a few years now, that the relationship would have improved, but that would be a lie. If anything, we dislike one another more now than a few years ago. I don’t think we will ever even so much as like each other, but so be it…

On a food note, the other night I was putzing around in the kitchen. I was making tacos, which I could eat 5 out of 7 days a week and not get sick of them. I prefer the blue corn tortillas, for they are AMAZING. Anywho, I like to top tacos different ways and kind of threw together a salsa/topping/call it whatever you want that was rather tasty. Sorry for no pic., but like I said I was tinkering around in the kitchen and such. Anywho, it went a little something like this.
Tinker Around Salsa/Topping
- 1 avocado, diced
- 1 small tomato, diced (larger if you like more tomato action)
- 1 lime
- 1/2 of an onion (red works best, but whatever will work), diced
- 2 tablespoons of chopped green chiles (I used the stuff from the can/jar)
- Couple shakes of garlic powder
- Salt
- Pepper
Process
- Mix the avocado, tomato, onion, green chile together. Squeeze in the lime juice. Add garlic powder, salt and pepper. Mix a few times and taste. If it is good to go, beautiful. Some might like chopped up cilantro in this, I am not a cilantro fan, hence no cilantro love in this mix. Best if you let it sit in the fridge for a bit, really will taste better, but it is still good right away. Enjoy on tacos, chicken, with chips, etc….
Ok, sweet cupcakes, I am off to tackle Friday. I need to go get on the food train, because I can not eat after 10:00 this morning, so time to go store some calories. Hopefully all will go well and the drugs they are using to sedate me will at least give me a couple hour break from life.
